El Salvador Ochupse — coffee with a good vibes only flavor. You can taste white grapes, yellow apples, apricot, and caramel — all blending into a warm, balanced cup you’ll want to sip slowly, as if tasting summer.
Created by Mauricio Escalón, a hereditary coffee lover who returned to the family business after a career in architecture. His story continues a coffee legacy that began in the 19th century.
In the 1870s, Mauricio’s great-grandfather Pedro José Escalón founded the first coffee plantation in Santa Ana and later El Molino (“The Mill”), the first industrial coffee processing plant in El Salvador. By the late 20th century, the family business faced crisis due to falling coffee prices, but with Mauricio’s return, it was revived. In 2003, the company Cafescal was founded — short for Cafes Escalon Calderon.
Today, the family business includes 10 farms and 2 mills. Mauricio manages production and oversees the export of specialty coffee. His Ochupse farm, located in the Apaneca-Ilamatepec region at 1250 m above sea level, grows Bourbon and Pacas varieties in the shade of Inga trees.
The cherries undergo 60 hours of anaerobic fermentation — the coffee fruit remains whole in sealed tanks without oxygen. In these conditions, yeasts and bacteria break down sugars, creating an intense fruity aroma and a clean, sweet cup without over-fermentation. That’s how the distinctive clean sweetness beloved in the specialty coffee world is born.
Coffees from Cafescal farms have repeatedly won Cup of Excellence awards. The company also runs a social program called Happy People, focused on joy in daily work and the self-realization of everyone involved in creating this coffee.
