Ethiopia Hambella
Bella is a true star from the birthplace of coffee — the Guji zone in the
Oromia region. Guji was once part of Sidamo, but today it stands as a separate,
unique region with ideal conditions for growing Arabica. Forest-covered land,
elevations above 1500 m, rich and well-drained volcanic soils that need little
fertilisation, a highland tropical climate with 1500–2500 mm of rainfall over
nine months, and comfortable temperatures between 15 and 24 °C — everything
here works in coffee’s favour.
This lot comes from
Bedesa Kebele, grown at 2050–2150 m above sea level. Processing method:
Anaerobic Natural. Carefully selected ripe cherries are fermented in sealed 200
kg tanks for five days in the shade (low-temperature anaerobic fermentation),
then slowly dried for 26 days on shaded African beds, turned every 2–3 hours
for even drying.
The entire process
takes place at the modern Hambella Bella washing station. The station itself
sits at 2450 m — a rare altitude for processing facilities. Fresh cherries
processed here are harvested at 2100–2300 m. It’s an unusual setup where the
processing station is located higher than the farms. The station is equipped
with modern Brazilian machinery, 180 drying beds, a 400 m² drying patio, an
experimental area, and its own quality control lab.
Now to the flavour —
and honestly, it’s hard to hold back. The aroma is intense, like a fruit
liqueur. In the cup: juicy blackberry, fresh lemongrass, and ripe sweet melon.
The aftertaste is sweet with light alcoholic notes, like a well-made dessert
cocktail.
