The aroma brings out cherry and dark grape, while the taste delivers pear, cherry, grape, and a hint of caramel.
The beans are grown in Matazano, a municipality in La Paz Department, right next to the Montesillos Nature Reserve. The farms here sit high in the mountains, with clay-loam soil and a mild climate. Less sunlight means slower growth — and that’s what gives the coffee a deeper, richer flavor. Many of the trees grow in the shade of banana palms.
Matazano is part of the Marcala region — the first in Honduras to receive a geographical indication for coffee: Café de Marcala. If we were talking wine, this would be the Bordeaux of coffee, you know ;)
