This lot comes from the Brazilian region of Minas Gerais, grown at altitudes of 800-1600 meters. The beans underwent a special CO₂ (carbon dioxide) processing that removes only the caffeine, leaving all the coffee’s flavor qualities intact. First, the beans are soaked in water, then treated with compressed carbon dioxide under pressure at a temperature of 70°C. In these conditions, CO₂ becomes a liquid that acts as a solvent, extracting only the caffeine without affecting the aroma and taste.
