This is coffee from La Miel farm, founded in 2015 as a botanical garden for exotic varieties. Here grows Geisha from Panama, Mocha from Hawaii, Wush Wush, Pacamara from El Salvador, Pink Bourbon — in short, a genetic delight.
In the aroma of this lot — honey and red berries. In the taste — cherry, raspberry, peach. In the aftertaste — a real kiss from the tropics, because this tropical fruit vibe will stay with you for a long time. Processing method — natural anaerobic.
The cherries for this batch were processed at the La Cereza station. First, they are soaked to remove defects, dirt, and underripe berries. Then sorted by color and size — only the best remain: at least 98% ripe cherries. Next comes fermentation in anaerobic bioreactors. No oxygen, but full freedom for natural microorganisms to work their magic.
Behind it all stands Miguel Ángel Botina — farmer, ranger, activist. He not only runs the farm but is also part of the La Cereza research center and the Colors of Nature initiative. He works according to the principles of sustainable agriculture and truly believes in the future of responsible coffee.
